Under the general guidance and supervision of the F&B Manager and F&B Executive, within the limits of established corporate Policies, Procedures and Food and Beverage Manual, responsible for assisting the Manager and executive to provide Food and Beverage in assigned outlet.

- The restaurant captain must ensure that the restaurant is neat and presentable. A restaurant captain ensures that all centerpieces are on the tables properly and that linens, silverware and glasses are clean.
- It is their job to ensure all hosts and waiters are adequately trained, informed of the restaurant's policies and knowledgeable about menu items and daily specials.

To prepare dining room, including all necessary mise-en-place for service; serve customers in a professional, efficient and courteous manner.
- To clean agreed designated areas, in accordance with laid-down procedures, morning/evening routines and hygiene requirements.
- To change table linen as required and ensure dirty or damaged linen is counted
- To clean and refill cruet and condiment sets, order branded sauces and chutneys to ensure consistent supply.
- To ensure that flowers and table decorations are fresh and comply with agreed standards.
- To ensure sideboards on stations are adequately stocked with replacement cutlery, linen or other established needs, be they food or equipment.
- To take orders from customers and ensure these are given to the appropriate person to execute.
- To be totally familiar with the composition of all menu items.
- To serve food and beverages in accordance with laid-down standards, but above all in a professional, courteous manner.
- To ensure that customers are correctly charged, present the bill and take payment from the customer, in accordance with the procedures of the establishment.
- To attend to customer complaints satisfactorily.

To ensure standards of cleanliness, hygiene and tidiness are maintained throughout the hotel and to manage the housekeeping and laundry department efficiently to maintain standards and control costs.
- Supervising the daily cleaning of assigned rooms, bathrooms, corridor areas and public areas to the highest standards. This includes changing bed linen, replacing towels, cleaning bathrooms thoroughly, vacuuming, mopping and dusting daily
- Ensuring the upkeep of vacant rooms
- Replenishing brochures and paper goods throughout the bedrooms/hotel.
- Ensuring guest laundry is collected, charged and returned to the guest in a speedy and accurate fashion
- Ensuring guest property left behind is logged and stored in a secure location for lost property
- Resolving any guest problems or complaints when possible and ensuring management are kept informed
- Actioning any maintenance requests in order to comply with the hotel’s established quality standards and ensure guest satisfaction
- Managing a stock control and ordering system to ensure availability of stock
- Implementing the hotel’s good customer relations policy, including politely addressing guests and colleagues at all times
- Immediately reporting and documenting to management any observed or known safety hazards, conditions or unsafe practices and procedures
- Carrying out any other duties as may be reasonably required by management
- Timely sending the daily reports
