Lady FingerLady Finger or Okra, known as Bhindi in Hindi, forms an important part of the Rajasthani diet. Made in various forms; stir fried, stuffed or fried, this green veggie is delicious and healthy. Here is the recipe for one type of spicy Bhindi made at the kitchens of Mana Ranakpur, where you can sample the most authentic Rajasthani cuisine!

Ingredients Mirchwaali Bhindi (Spicy Lady Finger):

Lady Finger a.k.a. Bhindi (100g)
Green Chilly (25g)
Chopped Onion (10g)
Chopped Garlic (8g)
Cummin Seed (2g)
Turmeric Powder (2g)
Red Chilli Powder (2g)
Salt to taste
Mustard Oil (15ml)
Chaat Masala (2g)

Method of Mirchwaali Bhindi (Spicy Lady Finger):

  1. Wash the Lady Finger (Bhindi thoroughly) and cut along the length to make 4 – 5 long pieces.
  2. Repeat the above step with the Green Chilly
  3. Heat Mustard oil in a pan and add cumin seeds
  4. Once hot, add chopped onion & garlic. Wait for onions to start getting brownish in colour
  5. After that, add the Lady Finger. Cook it for about 1 minute on a mild flame
  6. Then add green chillies, turmeric powder, red chilli powder and salt to taste. Avoid using too much red chilli powder since green chillies have already been added
  7. Steam for about 3-4 minutes
  8. Add Chaat Masala at the end to enhance the taste
  9. Serve with Tawa Roti
