Rabodi ki Subzi is a traditional yet lesser known preparation from the kitchens of Rajasthan. The key ingredient, as suggested by its name, is called rabodi which is essentially papad soaked in butter milk. The papad could be either besan (gram) or makka (corn) based. Rabodi is prepared at homes across Rajasthan and is also available for purchase from ration stores. This delicacy is a vegetarian dish.

The quantity’s given below are sufficient for 2 people

Ingredients

20ml Oil
25 gm Onion
20 gm Tomato
5 gm Jeera
5 gm Red Chilli Powder
4 gm Salt
4 gm Coriander
4 gm Turmeric
100 gm Spring Onion
50 gm Rabodi

Procedure

  1. Heat oil in a pan and add cumin seeds
  2. Once the cumin seeds start to sizzle, add onion to the pan. Sauté the onion but do not let them become overly brown
  3. Add spring onions and add all the spices
  4. Cook for 2-3 minutes
  5. Add tomato to the pan along with some water (depending on thickness of gravy desired) and the Rabodi
  6. Cook for 8-10 minutes till desired gravy thickness is achieved
  7. Best served with Tawa Roti & Rice
